one with poison 2, min 1, and the other one with poison 2, min 3.
Then if the opponent is left with 5 hearts after the last round, which one of the
poison effects is evaluated first? If the min 1 goes first, then the opponent should
end up with 3 life (as the min 3 won't take effect), and otherwise all the way
down to 1.

Does the Freak ability Poison 2, min 3, stack?
For example I am I lose two rounds vs Freaks. Do I lose 4 points at the end of the second round or only 2?

Say i gt poisoned2min1.next turn poisened1min2.so i would lose no health 1st and 2nd turn and 1 health at the end of the 3rd and 4th turn.

Here's what I found out from experience.
1st turn: Hit with Nina (poison 2 min.1)
At the end of 1st turn: N/A
2nd turn: N/A
At the end of 2nd turn: poison for 2
3rd turn:Hit with Gheistling (poison 1 min.1)
At the end of 3rd turn: poison for 2
4th turn:N/A
At the end of 4th turn: poison for 1
The last poison overrides the first poison at the end of next turn.
